Gaston's Bakery and Mill
Mathieu Choux arrived in Boise from Burgundy, France in 2001. In 2006, he expanded his baking options to serve the local market. With a concern for gluten sensitivities and desire for holistic, healthy ingredients, Mathieu decided to install a mill and begin processing local wheat. He uses a specialized UNIFINE mill that pulverizes the wheat on impact, producing a high-quality, high-extraction,
nutritious flour. Instead of over-processing and diluting the wheat germ, the impact mill process maintains the integrity of the flour, providing more fiber and flavor.
Coffee is our life.
We have been direct sourcing, roasting, and blending specialty coffees since 1995. We utilize traditional European-style drum roasters, and strongly believe this hands-on method ensures that our coffees are crafted to perfection, resulting in maximum flavor. We roast our coffees daily and deliver it or ship it within 24 hours. Our goal is to provide the highest quality coffees, supported by the best customer service in the industry.
